Hummus and Lentil Bowl with Feta and Pistachios


A couple of months in the past I went to Ann Arbor, Michigan and found Lafayette Avenue Ceramics in a cute retailer. I instantly purchased one among their speckled plates and have been utilizing it ever since.

The opposite coloration of Lafayette Avenue Ceramics stunning items I liked was darkish blue. Be aware: I roasted carrots at 425F with olive oil, salt, pepper and turmeric for about 25 minutes. The carrots for the hummus have been diced; the carrots for the bowl have been quartered in size.

Roasted Carrot Hummus With Feta & Pistachios

1/2 pound roasted carrots

1 cup chickpeas

3 tablespoons tahini

3-5 tablespoons water or liquid from the chickpeas

1/2 lemon, juiced

1 garlic clove, smashed

salt & pepper to style

garnishes: crumbled feta, chopped pistachios, togarashi, chili oil

Instructions

1. Puree all elements however garnishes in a meals processor. Put right into a shallow bowl. Prime with garnishes.
